Directions
- Select a watermelon with a thick rind. ≈ 3 min
- Carefully remove the green part of the bark and discard it. ≈ 3 min
- Cut the peels into rectangles or triangles measuring 1.5 to 2 cm, or into cubes measuring 2 to 3 cm. ≈ 8 min
- Let them soak for 0.8 to 1 hour in lime water.
- Rinse them under clear water. ≈ 2 min
- Pour this boiling syrup over it.
- Cook in three stages, allowing 8 hours to rest between each stage.
- Add the citric acid and vanilla towards the end of the cooking process. ≈ 3 min
