Water kefir is a lightly alcoholic, sparkling drink made by fermenting with kefir grains. It must always contain between 3 and 10% sugar, along with many other ingredients that can vary depending on the recipe and personal preference: lemon, grape juice, fruit juice, dried fruit, malt, fresh mint leaves and other aromatic herbs such as fennel, cumin or anise, even honey or ginger root. The resulting drink is very refreshing and rich in vitamins and lactic ferments.

Directions

  1. Pour the water into the glass jar (do not fill more than 2/3) ≈ 10 min
  2. Add the sugar (and the malt, if using), and mix well. ≈ 4 min
  3. Add the juice of half a lemon, lightly squeezed. ≈ 3 min
  4. Add the dried fruit, seeds and kefir grains (tibicos). ≈ 3 min
  5. Close the jar and let ferment for 24 to 72 hours at a temperature between 12 °C and 24 °C.
  6. Strain everything, and the drink is ready to enjoy, perhaps after resting briefly in the refrigerator.

Before you start

Ingredients

  • 1 glass jar of 2 liters with a lid
  • 1 wide-mesh strainer, preferably not metal
  • 2 to 3 tablespoons kefir grains (30 to 80 g)
  • 1 or 2 dried figs or prunes, or 2 tablespoons golden raisins, or 3 dates, or a mix of dried fruit
  • Half a lemon, cut (organic lemons preferred)
  • 3 tablespoons cane sugar (1 ideally organic)
  • 1 tablespoon liquid malt (optional)
  • 1 liter mineral water with a concentration of 400-700 mg/l
  • 1 tablespoon seeds of your choice (cumin, anise, parsley) or fresh mint leaves

The screen stays on while cooking mode is open.
