Directions
- Soak the soy protein in hot water with a vegetable stock tablet dissolved, for about 15 minutes, or until it has expanded.
- Carefully drain any excess water from the soy protein and allow it to cool.
- In a bowl, combine the soy protein, chopped olives, chopped sun-dried tomatoes, egg, salt, and pepper, to your liking. ≈ 4 min
- Then, gradually add the breadcrumbs, until you reach a consistency that allows you to form meatballs (be careful not to add too many, as this could make the meatballs hard). ≈ 3 min
- Prepare the almonds and arrange them in a baking dish lined with parchment paper. ≈ 3 min
- Lightly brush them with olive oil, then bake in a preheated oven at 200 °C until they are golden brown.
- Serve them immediately. ≈ 2 min
