Directions
- We chop the carrots and onions, then sauté them in a pan (preferably with olive oil) over low to medium heat.
- We peel and chop the remaining vegetables. ≈ 3 min
- Once the onion becomes translucent, add the potatoes, carrots, and pumpkin (without the skin). ≈ 3 min
- Add water to cover all the vegetables, bring to a boil, then cook over low heat until they are tender (about 20 minutes).
- Once the vegetables are tender, mash them with a potato masher or a hand mixer until you have a thick puree. ≈ 4 min
- Add the pickles and salt to taste (you can add them at the same time). ≈ 3 min
- Add thick cream or olive oil (according to your preference), and let the soup simmer until it thickens.
