Directions

  1. Chop the vegetables into pieces. Add them to the hot oil, except for the tomatoes, and cook until the onions start to take on some color. ≈ 8 min
  2. Add the tomatoes, reduce the heat, and let it simmer for 15 minutes, stirring occasionally. Adjust the seasoning with salt, pepper, and a little sugar.
  3. Finely chop the herbs and mix them with the olive oil. ≈ 8 min
  4. In a saucepan, bring about 3 cm of white wine vinegar to a simmer. Crack an egg into a cup, reduce the heat so that the vinegar barely simmers, and gently pour the egg into the vinegar.
  5. Poach for 3 to 5 minutes: the yolk should remain runny and the whites should be set. Remove the eggs with a slotted spoon.
  6. Serve the sofrito, topped with poached eggs and drizzled with herb-infused oil. ≈ 2 min
