Soft vegan vanilla cake
A Swedish cake without eggs or milk: made with flaxseed, vegetable margarine, and oat milk, and baked for 35 minutes at 175 °C.
This Swedish cake doesn’t require eggs, as it uses a mixture of ground flax seeds and sugar that is cooked together. It is light and has a flavour of vanilla or cardamom.

Directions
- Whisk the flaxseed decoction (with the cream) and sugar together until the mixture becomes frothy, preferably using an electric hand mixer. ≈ 4 min
- Sift the flour and yeast together, then gently pour in the melted margarine and milk (which can be warm), and mix lightly to form a dough. ≈ 4 min
- Pour une cuisson parfaite, pour this in a greased and breadcrumb-lined baking dish. ≈ 3 min
- Bake for 35 minutes in a preheated oven at 175 °C.
- Carefully remove the cake from the pan once it has cooled slightly.
