Veal Ossobuco, red wine sauce
Slow-braised veal shanks in the oven, in a red wine and vegetable sauce. A rich and comforting winter dish, perfect served with pasta.
Ossobuco is an Italian stew made with veal shanks, which are slowly cooked until the meat separates from the bone. The marrow, which is scooped out and served in the sauce, is what makes it so special.

Directions
- The day before, marinate the meat in sherry and red wine with roughly chopped garlic, black peppercorns, rosemary, and thyme.
- Peel the carrots and chop them, dice the bell pepper, and place them in a saucepan. Season with slices of garlic, pepper, a pinch of salt, thyme, and rosemary. ≈ 8 min
- Dry the shanks, cut away the fat around them, and reserve the marrow. Heat the shanks in a generous amount of olive oil, place them on top of the vegetables, and then bake in a preheated oven at 130 °C (266 °F) on the middle rack for at least two hours.
- Prepare the sauce base using the meat cooking juices, marrow, garlic, and herbs from the marinade, chili pepper, and tomato paste. Deglaze with the wine marinade and reduce.
- Strain the mixture through a sieve, remove any excess fat, and add a little broth. Then, combine with the cream and bring to a simmer. Finally, adjust the seasoning with pepper.
- Serve with pasta or risotto, accompanied by a good red wine. ≈ 2 min
