University-style sweet potatoes
Japanese student snack: thinly sliced and fried sweet potato, coated in a sugar and rice vinegar/soy sauce syrup, and sprinkled with sesame seeds.
These university-style French fries are a revamped version of our classic French fries. They are steamed and then fried, resulting in a crispy exterior and a soft interior. Add a sweet and salty glaze for an unforgettable flavor.

Directions
- Cut the sweet potatoes into 3 cm pieces at an angle (rangiri), rotating each piece to create sharp edges. ≈ 8 min
- Soak them for about 5 minutes in the water, then drain and dry them.
- Fry them for 4 to 5 minutes in oil heated to 160 °C, until they are tender, then drain them.
- Place the sugar, water, oil, vinegar, and soy sauce in a small saucepan and bring to a simmer over medium heat. Stir the mixture occasionally, but do not stir once it has heated up.
- Test it by dropping a small amount into a glass of water: it should remain flexible without dissolving. ≈ 3 min
- Add the French fries and coat them with a wooden spoon, then sprinkle with sesame seeds.
