Directions
- All the ingredients intended for making the dough are mixed together until a firm and elastic dough is formed. ≈ 3 min
- The dough is then rolled out by hand or passed through a large-mesh sieve. ≈ 3 min
- The dough pieces are then dried for approximately 1 hour.
- In a deep container (approximately 5 litres), the fat (100 ml) is heated over high heat. ≈ 3 min
- The onion is finely chopped and sautéed. ≈ 3 min
- The red pepper is added, followed by 3 litres of water. ≈ 3 min
- When the water comes to a boil, the dough is added gradually. ≈ 3 min
- The mixture is then cooked over low heat for approximately 20 minutes.
- Optional: The dish, prepared and served in earthenware bowls, can be sprinkled with cheese. ≈ 2 min
- The puree can also be used to cover stale bread, and as a topping for roasted or grilled red meats.
