Directions
- Reheat the chopped onion, celery, and diced bacon with a tablespoon of olive oil.
- Add the chopped apples, sage, minced garlic, three tablespoons of broth, salt, and let it simmer for twenty minutes.
- Add the borlotti beans and Arborio rice, mix well, add a little broth, and then add more broth as the previous amount evaporates, while continuing to stir with a wooden spoon.
- Before serving, pour over the raw oil paint and sprinkle with pepper and grated pecorino cheese. ≈ 2 min
