A specialty of the Gilan region, located on the Caspian Sea, torsh tareh is a refreshing, green herb stew. Spinach and fresh herbs are cooked with a small amount of rice, and the addition of verjus (a type of grape juice) or bitter orange gives it its characteristic acidity, while egg is added at the end to bind the ingredients together.
