Directions

  1. Wash the tomatoes, peel them (unless you’re going to use a food mill), cut them into quarters, and remove the seeds. ≈ 8 min
  2. In a deep, heavy-bottomed pot, melt the butter, add the chopped tomatoes and bread, and cook for 30 minutes, adding broth as needed.
  3. Pass the cooked tomatoes through a sieve or blend them on a low speed. ≈ 4 min
  4. Add the broth and bring to a boil.
  5. Serve with rice, pasta, or golden-brown croutons buttered. ≈ 2 min
