Directions
- Preheat the oven to 180 °C.
- In a mixing bowl, combine the sugar and butter, using a wooden spatula to mix them together. ≈ 4 min
- Once the mixture is homogeneous, combine it with the egg yolks (reserve the egg whites). ≈ 4 min
- Then, add the flour/cornstarch along with the yeast and mix thoroughly. ≈ 4 min
- Whip the egg whites to stiff peaks, and gently fold them into the dough. ≈ 4 min
- Grease a round mold and pour in the dough, filling it halfway (or no more than halfway!) as it will expand during baking. ≈ 3 min
- Cook for approximately 30-40 minutes, until a knife inserted into the center comes out clean.
- Let the cake cool completely.
- In a large bowl, combine the evaporated milk, sweetened condensed milk, and heavy cream. ≈ 4 min
- The mixture should be smooth; then add the vanilla extract and rum (a splash). ≈ 3 min
- Pour this mixture over the warm biscuit (which will absorb it) and then refrigerate the cake.
- Before serving, the cake is covered with whipped cream (using a pre-made container makes this easier), and then decorated with the candied cherries. ≈ 2 min
- It is best served very cold. ≈ 3 min
