Directions
- Heat the oil in a pan, add the vegetables, excluding the carrots, radishes, and Brussels sprouts, and stir for two minutes.
- Add the Thai curry, lemongrass, and mix well. ≈ 4 min
- Add 1 cup of water and mix, then bring to a boil.
- Add the curry powder, mix well, and simmer over low heat for 20 minutes.
- Add the jasmine rice, mix well, and let it cook for an additional 10 minutes, then turn off the heat.
- Serve hot, sprinkled with grated ginger and lemongrass berries. ≈ 2 min
