Fish with turmeric and lemongrass
Finely chopped white fish, sautéed with garlic, shallots, lemongrass, and turmeric until almost dry: a fragrant dish to accompany hot rice.
This fish mixture, flavored with lemongrass, turmeric, and chili peppers, is served hot with rice, which should be dry, or with a small amount of sauce.

Directions
- Boil the fish flesh for about 2 minutes, then drain it.
- You can also tear it apart roughly with your fingers. ≈ 3 min
- Heat the oil paint in a pan.
- Add the minced garlic, shallots, and lemongrass, then continue cooking until they are fragrant.
- Add the fish flesh, turmeric, and bird’s eye chili. ≈ 3 min
- Mix well and cook over low heat for 5 to 10 minutes, until the oil separates or the mixture thickens slightly.
- If you prefer a saucy version, add a little water to your liking. ≈ 3 min
- Finally, add the powdered broth and mix thoroughly.
- Taste and adjust the seasoning. ≈ 2 min
- Serve with hot rice. ≈ 2 min
