Directions
- Cut the chicken into pieces and season it. In a large saucepan, heat a little oil over high heat and sauté the chicken for 2 minutes, then remove it.
- In the same saucepan, add a drizzle of oil, then the garlic. Once it is browned, add the onion, bell pepper, and green chili, and cook them together. ≈ 3 min
- Return the chicken to the pot, pour in the white wine, and let it reduce, then add the broth.
- While the chicken is cooking over low heat, heat the sugar in a separate saucepan with a few drops of water. Once caramelized, add the lemon juice or vinegar, then a little broth. Carefully collect the caramelized sugar. Then, mix this sweet and sour broth with the chicken.
- Once the chicken is cooked, whisk the flour into cold water, then pour it into the sauce and let it thicken slightly.
- Finally, add the diced peaches and mix everything together. ≈ 4 min
