Directions
- Sprinkle the yeast into a saucepan, pour in the milk, and heat to 37 °C, stirring constantly to prevent it from sticking.
- Pour une grande salade ou dans the bowl of a food processor, add the syrup, mix well, then add the oil (reduce the amount of syrup slightly if you find it too sweet).
- Add the graham flour, wheat flour, and any desired fillings, and knead for 2-3 minutes on a low speed using the dough hook. The dough should be firm; use a spatula to help the mixer.
- Cover with a dishcloth and let it rise for about 45 minutes, away from drafts.
- Preheat the oven to 225 °C, using the top and bottom heating elements.
- Divide the dough in half. Roll each half into a sausage shape, then cut it in half, and then each half into 8 pieces: this will give you 16 small rolls per half. Round them off and place them on two baking sheets lined with parchment paper. ≈ 3 min
- Cover and let it rise for another 15 minutes.
- Bake each tray for about 10 minutes in the middle of the oven, until the bread is golden brown. Let them cool under a dishcloth.
- Once they are cooled, they freeze very well in individual portions. ≈ 3 min
