Directions
- Mix the mulberries with the sugar, making sure the sugar-to-mulberry ratio is approximately 1:3. ≈ 4 min
- Cook, stirring constantly, for 1 hour over low heat.
- (The juice will immediately separate from the mulberry pulp, and some juices will begin to settle at this stage, but I preferred to wait.) ≈ 3 min
- After cooking for 1/2 hour, add the juice of half a lemon, then strain the jam at the end.
- You will obtain a thick, syrupy jam, and leftover fruit that can be used to make a thicker jam, ideal for accompanying cakes. ≈ 3 min
- This intensely flavored jam can be used as a glaze for various dry cakes, on vanilla ice cream, yogurt, in oatmeal, as a sauce for cheesecakes, or as a food coloring for cakes – it gives a beautiful violet color. ≈ 3 min
