Directions
- Wash the mushrooms for at least one hour. ≈ 2 min
- Drain the kohlrabi of its juice, then pour it into a large pot and boil for about 30 minutes.
- Stir the water, add the chopped mushrooms and a tablespoon of butter, then let it simmer for another half hour.
- Towards the end of the cooking process, add a thick paste made from butter and flour. ≈ 3 min
- Place 2 to 3 tablespoons of filling on each crepe. ≈ 3 min
- Fold the two edges of the crepe inwards, then roll to form a roll. ≈ 10 min
- Coat the crepes with a mixture of egg yolk and breadcrumbs. ≈ 3 min
- Fry in hot oil for 2 to 3 minutes.
