These long, hollow peppers are filled with a mixture of beaten eggs, onion, and ground apple. They can be served as an appetizer, a main course, or as a side dish, and are enjoyed year-round.

Directions
- Wash and clean the peppers, empty them from the inside by cutting along the top, and set them aside. ≈ 8 min
- Sauté the chopped onions and apples in olive oil until softened. Once cooked, remove them and place them in a bowl. ≈ 3 min
- Add the beaten eggs, season to your liking, and mix well. ≈ 4 min
- Fill the peppers with this mixture and seal them with a toothpick. ≈ 10 min
- Place them in a baking dish, on top of the unpeeled and washed half-potatoes, which will act as a base. Drizzle with a little olive oil. ≈ 3 min
- Preheat the oven to 180 °C (350 °F). Place the peppers in the oven and turn them halfway through cooking until they are golden brown.
- Serve with the base potato or with a salad. ≈ 2 min
