Directions
- Combine the coconut leaves with 1/2 cup of water, then press to extract the juice. ≈ 4 min
- Wash the noodles, soak them for about 4 to 6 hours, then drain.
- Clean the sieve, pour in the couscous, add 200 ml of water, stir occasionally, and let it rest for about 3 hours so that the couscous softens.
- The sticky rice, cooked rice, and pandan leaf juice are cooked over low heat with 100g of sugar until they are tender.
- If needed, add a little water. ≈ 3 min
- Next, combine everything in a food processor with 1 tablespoon of oil paint and a small amount of orange fragrance (optional, as the pandan juice already provides a flavor). ≈ 3 min
- If the mixture seems dry, add a little more oil paint, as the sticky rice and cooked rice can vary in texture. ≈ 3 min
- Soft and tender mung beans, steamed and seasoned with a pinch of salt, then finely pureed.
- Combine the mung beans with 100g of sugar in a pot, stirring over low heat until the mixture thickens.
- Add coconut milk, guava jam, sesame seeds, and essential pomelo oil, and mix well. ≈ 4 min
- Let it cool completely, then form small balls, about 50g each.
- Divide the sticky rice into portions of approximately 100 grams each. ≈ 3 min
- Use 10 x 10 cm molds, filling each mold with the filling. Form a ball, press it into a mold covered with a sheet of aluminum coated with oil paint, then cover with a sheet of plastic coated with oil paint, pressing firmly. Remove the patties and pack them in a thick plastic sheet, folding over the excess plastic to keep them securely closed. ≈ 3 min
