Directions
- Flatten the chicken breast to a uniform thickness using a rolling pin, a container, a mallet, or any other flat and clean object. ≈ 3 min
- This step is important: it helps to prevent unevenness in the breast area and ensures even cooking. ≈ 3 min
- Season or marinate the chicken breasts to your liking.
- If you don’t want to use any seasonings, or if you prefer a plain chicken flavor, simply use a pinch of salt and pepper. ≈ 2 min
- Heat a skillet over medium-high heat, then evenly coat the bottom with a layer of olive oil or butter.
- Reduce the heat to medium, place the chicken breasts in the pan, and cook one side for 1 minute.
- Reduce the heat to low (not very low), turn the chicken pieces over to the uncooked side, and cover the pan.
- Allow the chicken to cook on this same heat source for 10 minutes, while the temperature gradually decreases.
- It is important not to open the lid, as the trapped heat is necessary to complete the cooking of the chicken. ≈ 3 min
- After 10 minutes, if you are using a gas stove, turn off the pilot light.
- If you are using an electric stove, remove the chicken from the stove, turn off the griddle, and place it on the countertop. ≈ 3 min
- In both cases, allow it to rest for an additional 10 minutes, as it continues to cook.
- Once again, please do not open the lid. ≈ 3 min
- Open the lid and check the chicken to make sure it is cooked through and not pink inside. ≈ 3 min
- If you are using a thermometer that provides instant readings, the center of the chicken should reach at least 74 °C. ≈ 3 min
- If the chicken is not cooked after resting, or if the lid is opened, return it to the oven, turn the chicken pieces over, and continue cooking, always covered, at medium heat, until the safe internal temperature is reached.
