“Apfelschlangerl” have been a long-standing tradition in the Innviertel region (Upper Austria). My grandmother taught me how to make them, and I have always been actively involved, eagerly anticipating the chance to enjoy these pastries.

Directions
- Mix the flour, salt, and powdered butter together. ≈ 4 min
- Combine the edotter, water, rum, and lemon zest in a bowl. ≈ 4 min
- Let it rest in the refrigerator for about 1 hour.
- Spread the dough to a thickness of about 3 mm. ≈ 4 min
- Fill half of the dough with the grated apples, cinnamon, and raisins, then cover with the remaining dough. ≈ 10 min
- Cut into thin strips, about 4 cm wide, and roll them into spirals, folding them 3 to 4 times. ≈ 8 min
- Brush with egg and bake in a preheated oven, using convection (hot air) at 180 °C, or at 160 °C with both top and bottom heat.
- The baby dragons should be a beautiful golden color. ≈ 3 min
