Directions
- Cut the pancetta/bacon into pieces about 2 cm long. ≈ 8 min
- Boil the water in the pot, then add the salt once the water starts to boil.
- Cook the spaghetti until they are al dente, and reserve 100 ml of the cooking water.
- Heat the olive oil in a pan over medium heat.
- Add the pancetta/bacon when the oil is hot, and cook them over low heat for about 10 minutes, until they have rendered most of their fat, but remain tender and slightly golden.
- In a bowl, combine the egg yolks with the pasta cooking water that you have set aside. ≈ 4 min
- Add the cheese and pepper. ≈ 3 min
- Gently mix with a fork. ≈ 4 min
- Add the spaghetti to the pan with the bacon/pancetta, stir, then turn off the heat.
- Add the egg mixture and mix until it evenly coats the pasta. ≈ 4 min
- Season with salt and pepper. ≈ 2 min
