Directions

  1. Duration: 1 hour and 30 minutes
  2. Prepare a round metal mold with a central hole of 24/26 cm in diameter, and place it in the refrigerator until you are ready to use it.
  3. All preparations covered in jelly are referred to as “en bellavista”: this sole dish, therefore, will be covered in a clear jelly, as we will see, after being prepared, which will make it more appealing. ≈ 3 min
  4. In a ceramic or porcelain dish, place the pre-cooked sole fillets, and use a fork to mash them.
  5. Next, add the potatoes, the Russian salad, the mayonnaise, curry powder, oil, vinegar, lemon juice, salt, and pepper, adding each ingredient one at a time and mixing everything together for about ten minutes. ≈ 3 min
  6. Adjust the salt and pepper to your liking. ≈ 3 min
  7. Soak the gelatin sheets in cold water and let them rest for 10 minutes.
  8. Heat 500g of water in a pot until it starts to boil, then remove from the heat.
  9. Remove the fish glue sheets, place them in hot water, and melt them gently by stirring with a spoon.
  10. Remove the mold from the refrigerator, pour in 2 cm of jelly, and turn it in all directions to coat the sides of the container. Then, pour in another 2 cm of liquid and return the mold to the refrigerator until the jelly has set.
  11. Remove the container and, using a spoon, shape the mushroom mixture into a cylindrical form that can fit inside the mold without touching the sides, but resting only on the solidified gelatin at the bottom.
  12. The dough will take the curved shape of the ring it will be placed in, and once it is finished, the remaining gelatin will be poured into it by spoonfuls, making sure to allow each layer to cool before adding the next.
  13. That’s why, if all the liquid were added at once, the preparation could be ruined. ≈ 3 min
  14. Once the gelatin has been fully incorporated, place the container in the refrigerator and allow it to chill for at least 4 hours (or preferably longer), as it is best to prepare the dish the day before it is to be served.
  15. Just a few moments before serving, remove the mold from the refrigerator.
  16. Using a sharp knife, carefully peel the jelly away from the inner and outer edges of the ring. ≈ 3 min
  17. Place a larger container filled with hot water next to the mold, and carefully submerge it, ensuring that the water does not spill into the mold. ≈ 3 min
  18. Please wait a few moments until the jelly starts to move in the container. ≈ 3 min
  19. Next, place a plate on top of the mold, and, with a firm and decisive movement, turn the plate and mold over together, to encourage the jelly to turn over without breaking. ≈ 3 min
  20. Decorate the plate according to your preference, placing lettuce leaves in the hole of the ring and slices of lemon or orange around the edges. ≈ 2 min
  21. Serve chilled, alongside a white wine. ≈ 2 min
  22. This dish can be served as an appetizer or as a main course alongside a meat dish during a meal. ≈ 3 min
