Directions

  1. Heat the liquid to a temperature that is comfortable to the touch, either in the microwave or in a saucepan.
  2. Sprinkle the yeast over the liquid and mix. ≈ 4 min
  3. Add the sugar (or syrup, or honey), salt, and 200g of wheat flour, and mix vigorously with a wooden spoon. ≈ 4 min
  4. Gradually add the flour and flakes, kneading by hand. Incorporate the oil and continue kneading, adding flour gradually until the dough pulls away from your hands and the sides of the mixing bowl. ≈ 10 min
  5. Cover with a dishcloth and let it rise for 20 to 30 minutes in a warm place.
  6. On a floured work surface, knead the dough briefly to release any trapped air, form it into a log, and then cut it into 8 to 12 pieces. ≈ 10 min
  7. Shape small loaves, place them on a baking sheet lined with parchment paper, cover with a dishcloth, and let rise for 10-15 minutes. Preheat the oven to 225 °C.
  8. Bake in the oven for 10 to 15 minutes.
  9. Remove the small breads from the pan; to achieve a soft crust, cover them with a dishcloth while they cool.
