Sima is a traditional Finnish drink, typically alcoholic and fizzy, made from water, sugar, syrup, and lemon. This recipe will allow you to prepare approximately 9 liters of sima.

Directions
- Thoroughly clean the plastic container or 10-litre bucket. ≈ 8 min
- Pour in the sugar and syrup at the bottom of the container. ≈ 3 min
- Boil about half (3 to 4 litres) of the water, pour it into the container, and stir to dissolve the sugar.
- Then, add the remaining water. ≈ 3 min
- Wash the lemons, cut them into slices, and place them in the liquid so they can float. ≈ 8 min
- Wait for the liquid to reach room temperature, then add the yeast. ≈ 3 min
- It’s best to rehydrate the yeast in a small amount of wine.
- Allow the wine to rest in the container at room temperature overnight, covered.
- The following day, pour the wine into glass bottles. ≈ 3 min
- Add a few grapes and a teaspoon of sugar to each bottle. ≈ 3 min
- Seal the bottles loosely and allow them to ferment for 2 to 3 days, until the grape skins rise to the surface and the wine is ready to be consumed. ≈ 3 min
- After this, the wine can be stored in the refrigerator and will be ideal after about a week.
