Directions
- First, thoroughly wash the onions and chop them into pieces about the size of your little finger. ≈ 8 min
- While you are chopping the onions, you can apply a small amount of mustard-colored oil paint to your hands to prevent irritation. ≈ 8 min
- Rinse the chopped onions under water and let them drain. ≈ 2 min
- Peel the shrimp, but you can also keep the heads and tails if you wish, as they will add flavor to the soup. ≈ 8 min
- Rinse the shrimp and drain them. ≈ 2 min
- Next, mix them with a pinch of salt and turmeric, and let them rest for 5 minutes.
- In a pot or pan, heat up some mustard oil.
- Gently return the shrimp to the pan, then cover it.
- Don’t overcook the shrimp, or they will become tough.
- Let them cook for about 1 to 2 minutes, until they turn a pink color.
- In the same oil paint, add a bay leaf and some dried chili peppers, and mix well. ≈ 4 min
- As the aroma of the feijoa leaves emerges, continue to stir in the chopped onions. ≈ 4 min
- When the onions turn a golden color, add a mixture of garlic and ginger paste, and cook until tender.
- This will eliminate the strong odor. ≈ 3 min
- Next, continue to stir with the chopped tomatoes until they soften and the oil separates from the paint. ≈ 4 min
- Thoroughly mix the ground ginger, ground chili powder, ground cumin, and ground cilantro with the spices. ≈ 4 min
- Simmer over low heat for 2 to 3 minutes, until the spices are well incorporated.
- This step is very important, as it allows for a beautiful color and a delicious flavor to be achieved in the dish. ≈ 3 min
- Add the chopped Cucumis melo after you have seasoned it. ≈ 2 min
- Combine the Cucumis melo with the spices and stir for 4 to 5 minutes.
- This will allow the spices to penetrate the Cucumis melo and give it a unique flavor. ≈ 3 min
- Keep stirring to prevent the Cucumis melo from sticking to the bottom of the pot. ≈ 4 min
- Then, add water until you reach the desired consistency. ≈ 3 min
- Generally, you need to add enough water so that the rice and spices are completely submerged, as the rice needs time to cook and the sauce becomes more flavorful as it thickens.
- Cover and cook over medium heat for 15 to 20 minutes, or until the rice is tender.
- Stir once during cooking. ≈ 4 min
- Once the baked apples are cooked and tender, adjust the seasoning with salt and sugar. ≈ 2 min
- Then, add the pre-cooked shrimp and fresh chili peppers (whole or halved). ≈ 3 min
- Cover and let simmer for 5 to 6 minutes, allowing the flavors to meld and for the hot peppers to release their aroma.
- If the sauce is too thick, add a little hot water. ≈ 3 min
- If it’s too thin, leave the pot uncovered for a few minutes to allow it to thicken.
- Finally, sprinkle with chopped parsley on top and cover the pot. ≈ 2 min
- Let it rest for 2 to 3 minutes to allow the parsley’s aroma to develop.
- Finally, serve hot in a nice dish. ≈ 2 min
