Directions
- Clean the shells by soaking them in water to remove any impurities.
- Remove the shells and valves, then chop the crab meat in a food processor or blender. ≈ 8 min
- Add a pinch of salt to the ground meat, then pour in some water to thoroughly mix and press, in order to extract the crab juice. ≈ 4 min
- Once the juice is almost finished, collect the remaining pulp by filtering it through a sieve and a fine cloth. ≈ 3 min
- Repeat the filtering and pressing process several times to extract all the juice and remove any remaining crab meat. ≈ 3 min
- The crab stock is placed on the stove over low heat.
- The lid is open, and the broth is gently stirred to prevent the crab meat from sticking to the bottom of the pot.
- The cooking continues over low heat until the broth begins to boil, at which point I stop stirring and allow the crab meat to float and firm up.
- Using a colander, we remove the crab meat from the pot and place it in a large dish. ≈ 3 min
- We add the mango to the broth and continue to cook over low heat.
- Once the mangoes are cooked and floating in the broth, they are removed and mashed in a bowl with a little of the broth to create a sauce.
- Then, I pour this sauce into the pot. ≈ 3 min
- We add soy sauce, salt, a little fish sauce, and season to taste. ≈ 2 min
- Use a small spatula or a thin straw to remove the shells from the crab. ≈ 3 min
- Heat some oil in a pan, then add the chopped onion and garlic.
- Add the crab shells and cook them quickly.
- Next, remove the crab pieces from the pan and add them to the pan with the oil paint.
- Then, add diced tomatoes and cook until they are tender.
- Some people who prepare this dish do not remove the crab meat from the broth, but instead leave it directly in the pot.
- In this case, the crispy crab shells are added on top of the meat. ≈ 3 min
- Others, in order to increase the amount of crab meat or to make it firmer, often mix the crab broth with a little beaten egg or mashed tofu before boiling it.
- The broth can also be made using pork bones, a few shrimp or mussels, and then filtered to obtain a clear broth.
- Some people even add a few mushroom stems to enhance the flavor. ≈ 3 min
- Cut the pork into thin slices. ≈ 8 min
- The soybean sprouts, cabbage, and lettuce should be washed and cut into pieces. ≈ 3 min
- Peel and finely chop the cabbage leaves, or cut them into appropriately sized pieces, then rinse them. ≈ 8 min
- Boil another pot of water and cook the soybean sprouts and cabbage leaves, making sure not to overcook them, as they should remain crisp and flavorful.
- Arrange the vegetables in separate plates or bowls. ≈ 3 min
- Fresh vegetables, such as soybean sprouts and lettuce leaves, should also be washed and arranged on plates. ≈ 3 min
- Lightly soak the rice cakes in cold water to soften them.
- Boil a pot of water; this will be used to soak the cakes before eating them.
- Soak the noodles in boiling water, then place them in a ceramic bowl.
- Add ground pork, cooked pork, shrimp, and spinach, according to your preferences. ≈ 3 min
- Pour evenly coat the inside of the pot, pour the sauce until it almost reaches the rim. ≈ 3 min
- Add lemon juice (or vinegar), hot pepper (or hot sauce), and pepper, to taste, and serve. ≈ 3 min
