A creamy salmon risotto: round, pearly rice, white wine, fish broth added gradually, salmon flakes, and grated Parmesan cheese for finishing.
Risotto is a traditional rice dish from northern Italy. In this version, the round rice is cooked in a fish broth, then combined with salmon pieces and Parmesan cheese.

Directions
- Peel and chop the onion, then sauté it in a pan with oil for about 5 minutes.
- Add the rice and stir until it is evenly coated. ≈ 4 min
- Pour the white wine and stir. ≈ 4 min
- Add 1 dl of broth and stir. Once the rice has absorbed all the liquid, add more broth, and repeat. ≈ 4 min
- Cut the salmon into small pieces and add it. Cook for 5 minutes.
- Add the grated Parmesan cheese. ≈ 3 min
- Let it rest for a few minutes and then serve.
