Directions

  1. Wash two, or three, delicate young globe artichokes, and cut out their hearts, chopping them into small pieces. ≈ 8 min
  2. This means removing all the outer leaves, cutting off the top third, and then peeling away all the tough parts – but not too much, or there won’t be much left on the plate! ≈ 8 min
  3. Cut the foot to a maximum of 2 cm, and also peel it. ≈ 8 min
  4. Finely chop the parsley, mint, and garlic. ≈ 8 min
  5. The original recipe suggests filling the space between the leaves with this mixture. ≈ 3 min
  6. However, the globe artichokes are cut in half, placed flat in a baking dish, and then sprinkled with herbs. ≈ 3 min
  7. Add water and high-quality olive oil, salt, and cook over very low heat for about 20 to 30 minutes.
  8. Therefore, the sauce needs to be reduced significantly.
  9. It is best to enjoy them warm, with a little pepper. ≈ 3 min
