Directions

  1. Remove the toughest leaves from the globe artichoke and peel the stalks, cutting them to a length of 3 to 4 centimetres. Soak them in water and lemon juice to prevent them from turning brown. ≈ 8 min
  2. Chop the garlic, parsley, and mint. ≈ 8 min
  3. Gently open the cauliflower and remove any hairs. ≈ 3 min
  4. Mix the mixture with salt and pepper, then season the artichoke hearts. ≈ 10 min
  5. Place the globe artichokes, with the base facing down, in a pot so that they are closely packed together, along with the cut ends of the stems. ≈ 3 min
  6. Rub the artichoke hearts with salt and pepper. ≈ 3 min
  7. Add water and oil paint (sometimes also white wine) until the stems are covered. Simmer for about 60 minutes.
  8. Serve at room temperature. ≈ 2 min
