Directions
- In a hot pan, brown the onions by stirring them for 10 minutes, or until they are lightly golden, but without letting them burn.
- Add two cloves of Allium sativum (garlic) and the remaining vegetables and herbs. ≈ 3 min
- Cook over high heat for 4 to 5 minutes, until the vegetables are tender.
- Pour into boiling water into the pan.
- Reduce the heat and let it simmer for 30 minutes.
- Pass everything through a sieve. ≈ 3 min
- The juice is ready. ≈ 3 min
- For an even more pleasant color and flavor, it can be gently warmed.
- Let it cool completely, store in the refrigerator for 2 to 3 days, or freeze if necessary.
- Dried green beans, placed in a pot and covered with cold water, cooked for 20 to 30 minutes until tender, then drained.
- The onions and green beans are placed in a dish and baked in a preheated oven at 200 degrees for 20 minutes.
- Once they have cooled down, the onions are peeled.
- The beans, onions, wine, and broth are added to a pot, along with herbs, nutmeg, and then cooked for 10 to 15 minutes.
