Roasted duck with apples is a popular Polish festive dish. The tart apples balance the richness of the meat, and the sauce is made with the pan juices.

Directions
- Wash the duck and rub it with salt and caraway seeds. ≈ 2 min
- Fill it with the small apples (and optionally a sprig of marjoram), then sew up the opening. Cook the larger apples separately.
- Place the chopped onions under the duck and roast in a dish at 180 °C, first basting with broth, then with its own juices.
- Add the flour to the cooking fat, mix well, and bring to a boil to create the sauce.
- When serving, surround the duck with a few roasted apples and drizzle with sauce. Serve the remaining sauce in a gravy boat. ≈ 2 min
