Herb-roasted chicken with lemon
A roast chicken seasoned with spices, filled with thyme, rosemary, and lemon, with butter rubbed under the skin of the breasts for a tender texture.
This roast chicken is easy to prepare: season the meat with spices, add herbs and lemon inside the cavity, and rub butter under the skin. A probe thermometer ensures perfect cooking.

Directions
- Remove the skin from the chicken and rub the meat with the seasoning. ≈ 2 min
- Arrange the lemon slices at the bottom of a roasting dish and place the chicken on top. ≈ 3 min
- Stuff the cavity with thyme, rosemary, and lemon wedges. ≈ 10 min
- Spread 15 grams of butter evenly under the skin of each chicken breast. ≈ 3 min
- Insert a thermometer probe into the cavity, without touching the butter. ≈ 3 min
- Bake in a preheated oven at 160 °C until the thickest part of the thigh reaches an internal temperature of 74 °C and the breast reaches 77 °C.
- Cover with aluminum foil, let it rest for 10 minutes, and serve.
