Directions

  1. First, remove the skin from the birds and wash them thoroughly. ≈ 8 min
  2. Next, rinse them thoroughly under water. ≈ 2 min
  3. In a bowl, combine the birds with 1 tablespoon of ginger paste and garlic, a pinch of salt, lemon juice, and 2 tablespoons of yogurt. ≈ 4 min
  4. Thoroughly mix the ingredients and let the mixture marinate for at least 30 minutes.
  5. Place a large pan or pot on the stove and heat the required amount of fat.
  6. Return the marinated swordfish to the pan until it turns a golden color, then transfer it to a serving dish.
  7. Now, heat the remaining oil paint in the main pot and add a small amount of ghee.
  8. Then, add the whole spices (cardamom, cloves, cinnamon, juniper berries, and bay leaves). ≈ 3 min
  9. Once the delicate aromas begin to develop, add the chopped onion and continue to cook over medium heat until it becomes lightly browned. ≈ 3 min

  11. Next, gradually add the turmeric, chili powder, cumin powder, pastis powder, ginger and turmeric blend, and salt to taste. ≈ 3 min
  12. Continue to stir and cook over low heat, adding a small amount of water if necessary, to prevent the spices from sticking and burning at the bottom of the pot.
  13. Once the oil paint has started to separate from the spices, add the pre-fried birds to the pot. ≈ 2 min
  14. Thoroughly mix the birds with the spices, and cook for a few more minutes.
  15. Now, cover the pot with warm water to the amount needed to cook the meat.
  16. Let it simmer over medium heat.
  17. Open the lid occasionally and stir gently to prevent the spices at the bottom from burning. ≈ 4 min
  18. Cook the quail until it is fully cooked and the sauce has thickened.
  19. Next, sprinkle with cayenne pepper and chestnut sugar (or brown sugar) before serving. ≈ 2 min

  21. Before serving, evenly distribute the remaining ghee over the top and cover with a lid for 5 minutes.
