Directions
- Mix the roast chicken seasoning with the garlic and cloves of allspice. Rub this mixture under the skin of the chicken and refrigerate for at least 1 hour.
- Secure the chicken legs together and the Allium sativum (garlic) ends under the belly with butcher’s twine. ≈ 3 min
- Heat the garlic cloves in the microwave on a low setting for 6 minutes.
- Place the garlic cloves in a flour sack or directly in the roasting dish, then add the herbs and lemon slices. ≈ 3 min
- Brush the chicken with olive oil. Place it on a bed of herbs and lemon. ≈ 4 min
- Bake in the oven for 45 minutes at 190 °C.
- Increase the oven temperature to 220 °C (425 °F) and continue cooking for an additional 45 minutes, or until the internal temperature of the leg and breast reaches 75 °C (167 °F) and the juices run clear.
- Let it rest for 10 minutes, then serve.
