Pork shin stew with peanuts
A Filipino pork shank stew, with tender meat in a thick peanut and cilantro sauce, accompanied by eggplant, long beans, and banana blossom.
This festive Filipino dish features incredibly tender pork shanks served with a rich peanut and grilled rice sauce, colored with annatto. The vegetables are added towards the end of the cooking process, and a sautéed shrimp paste accompanies the dish.

Directions
- Heat the oil in a saucepan, then add the minced garlic and onion.
- Season with fish sauce to your liking. ≈ 2 min
- Add the ground peanuts and rice. ≈ 3 min
- Pour in the cooking broth from the shank.
- Color with rocou juice. ≈ 3 min
- Bring to a boil and add the cooked shank.
- Continue to cook until the sauce thickens.
- Add the vegetables and let them soften. ≈ 3 min
- Serve with the sautéed shrimp paste. ≈ 2 min
