Directions
- Finely chop the onions and sauté them in a pan with oil until they are golden brown.
- Add the rice and mix. ≈ 4 min
- Add two cups of water, mix, reduce the heat, and cover.
- If you are using brown rice, please note that the cooking time is longer than for white rice. ≈ 3 min
- After about forty-five minutes, add the olives and chickpeas to the pan.
- Season with salt, pepper, and any other spices to your liking, then mix well. ≈ 4 min
- Once the rice is cooked and has absorbed all the water (if necessary, add a little more water), stir in the chopped parsley and remove from the heat. ≈ 3 min
- Serve hot. ≈ 2 min
