Vietnamese rice paper, thin, dried sheets of rice flour used for making spring rolls and other dishes.
Banh trang, Vietnamese rice pancakes: a thin rice flour batter spread thinly on a stretched cloth over boiling water, steamed, and then dried in the sun.
When grilled, they become crispy; when soaked in water, they are used to roll spring rolls and other Vietnamese dishes. Their handmade production requires a skilled hand: the dough must be spread quickly.

Directions
- Mix the rice flour with water, adding a pinch of salt, until you have a very smooth paste; you can also add any local spices you like. ≈ 4 min
- Drape a thin piece of fabric over the opening of a large pot filled with boiling water.
- Pour this a spoonful of dough onto the fabric and spread it immediately into a very thin disc using the back of the spoon; optionally sprinkle with sesame seeds. The process should be quick: a few seconds is all that’s needed. ≈ 4 min
- Once the pancake is cooked, carefully lift it with a wooden stick or bamboo tube and place it on a bamboo mat. ≈ 3 min
- Let the pancakes dry in the sun. ≈ 3 min
- Adjust the thickness according to the intended use: thick for grilling, medium for fresh rolls, and as thin as paper for spring rolls.
