Directions
- Peel and finely chop the shallots, then sauté them in butter until they are golden brown. ≈ 8 min
- Pour in the red wine and vinegar, and let it reduce (cook over low heat until only half the volume remains).
- Add the sauce, and any desired spices. ≈ 3 min
- Let it simmer.
- Remove the corn kernels from the sauce, then season with freshly ground salt and pepper. ≈ 2 min
- Strain through a fine-mesh sieve, then finish by adding a spoonful of butter. ≈ 3 min
