This mango chutney is a sweet, tangy, and slightly spicy condiment. The green mangoes are simmered in a syrup of vinegar and brown sugar, along with chili peppers, garlic, ginger, and small shallots. Grapes are added at the end for a final touch before being bottled.

Directions
- Measure the mango. ≈ 3 min
- For every 240 ml of mango, prepare 60 ml of vinegar, 240 ml of brown sugar, and 1 teaspoon of salt. ≈ 3 min
- Bring this mixture to a boil until it thickens.
- Add the mango, chili peppers, garlic, ginger, and scallions. ≈ 3 min
- Cook for 10 minutes, until the mango is slightly firm and elastic.
- Add the grapes. ≈ 3 min
- Pour: Pour into clean jars. ≈ 3 min
- Remove any air bubbles and seal. ≈ 3 min
