Directions
- Considering the different cooking times, particularly for the peppers (which require the longest cooking time, as they should not be crunchy at the end), and the eggplants (whose cooking time must be such that they do not become mushy), it is best to cook the peppers (with the onions), the zucchini, and the eggplants separately, then combine them and serve.
- However, it is best to cook everything together, following these steps: first, we estimate the cooking time for the peppers, zucchini, and eggplant; then, we cook the peppers, and once the remaining cooking time for the peppers is equal to the cooking time for the zucchini, we add the zucchini.
- We follow the same procedure for the eggplants (with or without tomatoes), ensuring that all ingredients are cooked properly and evenly. ≈ 3 min
- The peppers should be washed, emptied of their seeds, cut into strips about 3 to 4 centimetres wide at the base, and then divided into three or four pieces. ≈ 3 min
- The onions, peeled, should also be cut into rings, but not too thin (a few millimeters). ≈ 3 min
- The zucchini, after being peeled and washed, should also be cut into rounds. ≈ 3 min
- The eggplants, thoroughly washed and free of any remaining seeds, should be cut into small pieces, including the skin. ≈ 3 min
- In a pan (although it’s best to use a baking dish that allows for slower, more even cooking, and which can potentially be served directly at the table once cooked), pour in a generous amount of olive oil, along with a few cloves of garlic, peeled and crushed. ≈ 3 min
- As soon as the garlic starts to turn golden, it should be removed, and the pieces of bell pepper (with the skin in contact with the bottom of the pan) should be arranged to form a base.
- Based on this, place the onion slices (in an amount sufficient to cover the peppers without completely covering them). ≈ 3 min
- The time has come: add the zucchini slices and then the eggplant slices. ≈ 3 min
- If you decide to use tomato puree (or canned tomatoes), add it along with the eggplant, but in a sufficient quantity so that the tomato flavor doesn’t completely mask the flavors of the other vegetables. ≈ 3 min
- Season with salt and mix well. ≈ 4 min
- Continue cooking until the vegetables are tender, adjusting the seasoning with additional salt if needed. ≈ 2 min
- Mix everything together, and if you like, add a little ground pepper. ≈ 4 min
- Garnish with fresh basil leaves and serve. ≈ 10 min
- The cooking process needs to be carefully monitored, as, especially in the early stages, with only peppers and onions, it’s easy for the peppers to stick to the bottom of the pan and for the onions to burn, resulting in an unpleasant taste.
- To prevent this, add a small amount of dry white wine, just enough to avoid the problem mentioned, whenever you notice an excessive reduction in the cooking liquid. ≈ 3 min
- This dish can also be served cold, in which case it would be advisable to add a handful of drained capers before serving. ≈ 2 min
- Given its strong flavor, due to the significant presence of pepper, this condiment pairs very well with red meats (roast beef or pork, steaks, cutlets or fillets). ≈ 3 min
- However, it is not recommended to use with fish dishes. ≈ 3 min
