Rafanata is a traditional dish from the Val d’Agri and Alta Materana regions in Basilicata. It is often served during Carnival celebrations.

Directions

  1. lard or extra virgin olive oil, depending on preference ≈ 3 min
  2. Boil the potatoes in lightly salted water, drain, and mash them with a fork or potato masher.
  3. Peel and coarsely chop the radish. ≈ 8 min
  4. Whisk the eggs in a bowl, adding pecorino cheese and a pinch of salt. ≈ 4 min
  5. Combine the eggs with the grated apple and horseradish. ≈ 4 min
  6. You can also add small pieces of salami or dry sausage for a more intense flavor. ≈ 3 min
  7. Grease the dish with bacon fat or oil paint, then pour in the mixture. ≈ 3 min
  8. Bake in a static oven at 200 °C for approximately 40 minutes, until a golden-brown crust forms.
  9. Remove the baking sheet from the oven and let it cool before serving.
