Risotto with radicchio and walnuts

Radicchio risotto is a classic dish from the Veneto region. The bitterness of the radicchio is softened during cooking and pairs well with Parmesan cheese.

Directions
- Prepare the broth and keep it simmering on the stove so that it remains hot and doesn’t interfere with the cooking of the rice.
- Heat the oil in a saucepan over medium heat. Add the chopped onion and cook until softened.
- Add the chopped radicchio and simmer over very low heat for 15 minutes.
- Add the rice and just enough broth to cover, then mix well.
- Add a generous pinch of coarse salt and continue cooking, adding broth occasionally and stirring frequently.
- Once the rice is cooked (according to the manufacturer’s instructions), add the Parmesan cheese, mix well, turn off the heat, cover, and let it thicken for 2 minutes.
- Arrange the peppers, freshly ground black pepper, and a drizzle of raw olive oil in the center of the plate, along with the walnuts. ≈ 2 min
- Serve hot. ≈ 2 min
