Directions
- First, boil the quail eggs in a pot of water with a pinch of salt for 5 to 7 minutes.
- After cooking, immediately place the eggs in cold water and gently remove the shells. ≈ 3 min
- In the peeled eggs, mix a pinch of salt and a small amount of turmeric powder. ≈ 4 min
- (If you wish, you can gently rub the shell to make it easier to open the egg). ≈ 3 min
- In a pan on the stove, heat up some oil paint.
- Once the oil paint is heated, add the eggs and cook them over medium heat until they are lightly golden.
- (Don’t overcook the eggs; they should remain soft).
- Add the chopped onion back to the same oil used to fry the eggs.
- Cook the onion over medium heat until it is lightly golden.
- Once the onions are cooked, add garlic paste and ginger paste, and mix for 1 minute to remove the strong aroma of the spices.
- Add a small amount of water to prevent the spices from burning. ≈ 3 min
- Then, add the remaining turmeric powder, chili powder, cilantro, cumin, and salt to the pan, and continue to mix well.
- Once the spices have been added and the oil paint begins to thicken, add the chopped tomatoes. ≈ 3 min
- Stir until the tomatoes have softened and are fully incorporated with the spices, creating a paste. ≈ 4 min
- Once the spices have been cooked thoroughly, add the pre-cooked eggs. ≈ 3 min
- Gently mix the eggs with the spices for about 2 minutes.
- Next, add about half a cup to a little more than a cup of hot water to the stew, to moisten it (since the stew is already cooked, it’s not necessary to add a lot of water). ≈ 3 min
- Once the sauce begins to simmer, add the fresh chili peppers, sliced thinly.
- Cover and simmer over medium heat for 4 to 5 minutes.
- Once the sauce thickens and becomes creamy, and the reddish oil from the spices coats the surface, sprinkle it with chopped parsley and a pinch of chili powder.
- Cover again and let simmer over low heat for another 1 to 2 minutes, then turn off the heat.
