Directions
- Dissolve the yeast in 100g of lukewarm water. Add the oil, salt, and mix with a fork, then incorporate the flour. ≈ 4 min
- Knead the dough and let it rise for at least 6 hours.
- Peel and grate the pumpkin, then let it drain for about 2 hours.
- Roll out the dough into a thin sheet, approximately 40 cm in diameter, and place it on a greased baking sheet. ≈ 4 min
- Divide the pumpkin into even layers up to the edges, season with salt, add your preferred herbs, and drizzle with 4 tablespoons of oil. ≈ 2 min
- Bake in a very hot oven, on the top rack, for about 30 minutes, without opening the oven for the first 15 minutes. Then, monitor it and remove the focaccia when the edges are just starting to turn golden brown.
- Allow to cool to room temperature (remove it from the pan immediately if it’s made of copper), then serve sliced on a plate.
