Directions
- Place the flour, baking yeast, and fine salt in a bowl. ≈ 3 min
- Add the lukewarm water and mix with a wooden spoon until you have a smooth paste. ≈ 4 min
- Knead the dough by hand for 5 minutes, cover it with a damp cloth, and let it rest for 2 hours in a warm place (for example, a preheated oven at 65 °C, then turned off).
- Make 6 balls of dough and roll them by hand to form sausages about 50 cm long, with a thicker center (up to 3 cm in diameter) than the ends. ≈ 10 min
- Twist the sausages to give them the characteristic shape of pretzels. ≈ 3 min
- Boil the water with added baking soda. Remove from the heat and quickly dip the pretzels, two at a time, until they float to the surface.
- Preheat the oven to 240 °C. Place the pretzels on a baking sheet lined with parchment paper, brush them with egg yolk, and sprinkle with coarse salt.
- Cook for 10 to 12 minutes, until the outside is golden brown and crispy, and the inside is tender.
