Directions
- Cut the pumpkin in half, peel it, remove the seeds, and cut it into pieces approximately 4 cm x 4 cm. ≈ 8 min
- With a small knife or paring knife, you can decorate the edges by creating a kind of groove. ≈ 2 min
- Soak the wood in water with lime for approximately 30 minutes, covering it with a cloth and stirring regularly.
- Remove the pumpkin from the ground, and wash each piece thoroughly under running water, using a small brush. ≈ 2 min
- Using a fork, pierce two holes in each piece of pumpkin, one on each side, and cook until they are tender.
- Remove from heat, drain, and refrigerate. ≈ 2 min
- With the water and sugar, prepare a thick jam, almost the consistency of syrup. ≈ 3 min
- Wash the pumpkin, ensuring it is at the same temperature as the broth – either hot or cold – and then boil it for 20 minutes.
- Remove from the heat and allow to rest in a copper pot for at least 24 hours.
- Store in sterilized jars, along with the spray product. ≈ 3 min
