Directions

  1. Peel the potatoes and cut them into small cubes. Cook them in a saucepan of boiling water until tender.
  2. Run the potatoes through a potato masher to get a smooth purée. ≈ 3 min
  3. Add the brewer’s yeast, the juice of the lemon, the milk and the pastis. Blend well until you have a smooth dough. ≈ 4 min
  4. Let the dough rest for 20 minutes.
  5. Divide the dough into equal portions and shape them into cakes the size of a small bread roll. ≈ 10 min
  6. Fry the cakes in a skillet with hot oil until golden on both sides.
  7. Dust them with confectioners’ sugar just before serving. ≈ 2 min
